Make your own fruit enzyme

My friend PL was here for a visit over the weekend. She shared about the health benefit of fruit enzyme and how it’s helping her with stress related ailments that both of us share in common. She brought some fruit enzyme that she made to share with my family. She mixed with some water and made a cup of drink for me. It taste quite nice and it caused so much gases that night, it’s embarrassing!

Many of us probably have heard and read about this fruit enzyme as a few organic stores have been promoting it quite a bit lately. I remember reading about a Thai alternative medicine practitioner named Dr. Rosukon Poompanwong who teaches people to make enzyme from kitchen waste.

Apparently, they are a few Malaysians who went to visit the health farm runs by Dr. Rosukon in Thailand. They came back promoting the making of fruits enzyme and garbage enzyme widely in Klang Valley. PL went to one of those classes to learn how to make fruit enzymes. Knowing PL is always eager to share what she learns with me. I asked her to do a demo on how to make fruit enzyme at home.

And this is the product we have, two jars of apples enzyme and one jar of dragon fruits enzyme from twenty green apples, two dragon fruits, six lemons and about 500 g of organic sugar.

(It started as a full jar but I forgot to take a picture. This is how it looked like after two days. The osmosis was drawing the juices out and fermentation has begun. Can see bubbles forming and smell like citrus wine.)

The skins and seeds of the fruits do not go to waste, they go in a jar to make garbage enzyme that can be used as fertilizer, disinfectant and many more. (You can also make this from kitchen waste.)

You must be thinking, yuck, the fermentation of this garbage must be really smelly! Believe it or not, this bottle of garbage actually smell pretty good, a bit similar to the citrus based deodorant you have in the car!

    My mum makes a lot of those.. At my house, you can see a lot of big bottles with different kind of fruits.

    I cannot eat those as too heaty for me. But my dad can..

    Tomato or Cherry Tomato 400gm
    Oligo 900 Powder 90g / 15sachets
    (Or Liquid Oligo 900) 15tbsp
    Lime Flower Honey 250gm / 1/4 bottle

    1) Rinse, dry and slice tomato.
    2) Divide ingredients into 3 portions. Stack ingredients in sequence; tomato, Oligo 900 and lime
    flower honey into the glass jar. Repeat the process with the remaining 2 portions.
    3) Seal tight with food wrap after the 3 portions of ingredients are completely stacked-in. Cover with a lid. Keep in dry and cool place for 1 week before serving.
    4) Mix 30ml with 10 times of water for serving Enzyme residue may be added too.

    are u using plastic jar or glass jar?

    some says do use glass jar. i am confuse.

    Use glass jar for the fruit enzyme, and use plastic jar for garbage enzymes.:-)

    Lemon Enzyme sounds so sour to me, anyway below for your reference:

    Lemon 500gm
    Oligo 900 90g / 15sachets
    (or Liquid Oligo 900 15 tbsp)
    Organic Brown Rice Vinegar 520 ml
    Lime Flower Honey 250g / 1/4bottle

    1) Rinse, dry and slice lemon.
    2) Divide ingredients into 3 portions. Stack ingredients in sequence : lemon, Oligo 900 and lime flower honey into the glass jar. Repeat the process with the remaining 2 portions.
    3) Pour in the organic brown rice vinegar after the 3 portions of ingredients are completely stacked-in. Seal tight with food wrap before covering with a lid. Keep in dry cool place for 2 weeks before serving. Better result if keep for 2-3 months.
    4) Mix 30ml with 10 times of water for serving Enzyme residue may be added too.

    Most of the sugar found in market is cane sugar. This disaccharide will be digested into single sugar as glucose and fructose, and absorbed into the body. Excessive consumption of these sugars may lead to chronic diseases, in particular diabetic. OLIGO 900 is found in corn, burdock, banana, onion, tomato, garlic and etc. U can get it from Organic shop.

    When we use lemon to make enzyme, must we take off the skin?

    Leah: I did. Unless you use organic lemons, it’s better to peel the skin, furthermore the skin gives a bitter taste.

    I made apple enzymes 4 days ago and I see bubbles formed on top of the liquid. Further, eventhough the jar is quite air-tight, I still get some fruit decaying smell. Have i made any mistake during the process of making?

    I tried to make the dragon fruit enzyme after looking at your web-site about 10 days ago.
    But now the surface is whitish in color – i think it has started to grow mould?
    Can I still use this if I shake the bottle to let the liquid cover the mould?
    I used about half bag of brown sugar (i.e. about 250gm brown sugar was used) in the bottle, and used 2 fragon fruits (red fruit). The reason I used less sugar was because I did not want it to be too sweet.
    Any suggestions would be welcome.

    I made a jar of apples, kiwis, limes and lemon enzymes. How high is the alcohol contents? I am allergic to alcohol, can I drink my enzymes with hot water to get rid of the alcohol? Would it defeat the health values?

    The whitish colour on top of the fruits isn’t mould. It is yeast. You may shake the bottle once a while to let the sugar cover the top part of the fruits.

    Can you please give me step by step instructions?
    I was told that we have to open the bottle to release the gas everyday.
    How long before you can use the enzyme? I was informed that for fruit enzymes it is 3 weeks & for household enzymes, it is 3 months?

    • brown sugar – 1kg
    • fresh garbage – 3kg
    • water – 10 liter

    method:
    1. pour water and brown sugar into container (ceramic, potery or plastic). stir in
    CLOCKWISE direction.
    2. put in fresh garbage, i.e. fruit peels, fresh leaves (yes, fallen from trees type!) or,
    other veggies or plants that you want to throw away. make sure the sugary water
    covers all the rubbish, if the rubbish floats, push them down.
    3. 3/10 percent of the pail has to be left empty for the yeast to work its magic.
    4. loosen the cap /cover to let the gas out everyday. UNTIL THERE’S NO GAS.
    5. the garbage enzyme will be done in 3 (THREE) month’s time. do not worry as there
    will be NO FOUL SMELL. just make sure the lid is coverd properly.

    Household waste enzymes, garbage enzymes, whatever you call it, it’s still composting.
    You can compost in a container of all sorts. I started out in a couple of small plastic bottomless crates outdoors 26 years ago. I haven’t bought any soil conditioner since. You just have to cut your waste into pieces, the smaller the size the faster they decompost, then put them into the container or composter and add water.
    If you do it outdoors, you can add a layer of soil on top to keep the bugs from laying eggs, then water the pile.
    If you stir the waste once a week in the summer, and add a bottle of regular coke (that provide sugar) in it once and awhile, within 3 weeks to one month, your compost is ready for use.
    In winter, I store my waste in garbage bags, then add them into my garden in the spring when I turn over the soil (till) and prepare the beds for planting. Then I cover the beds with black garbage bags, and plant my tomatoes and cucumbers on top of them.
    The waste provides nutrients and improves my soil while decomposting all summer, the crushed egg shells keep the bugs away from my seedlings, the black garbage bags keep the soil warm and keep the weeds away. It’s great!

    i have made some fruit enzyme with ratio 1: 3: 10. After one month of fermentation, the mould and the slices of fruits in some bottles will sink down at the bottom of the bottles while some still float on the top of the enzyme. Can someone help to explain? Thank Q.

    I prepared to make fruit enzyme by using various type of fruits that include apple (green and red), orange, grapes, pears, lemons and so on. the ratio was one kg of honey, 3kg of mixed fruit and 10L of distilled water.
    I used a plastic container which is not exactly air-tight.
    I shaked the container everyday for the first month. However, after the first month i noticed a white layer started to form on top. My question and concern are:
    1. can the fruit enzyme still be good for drinking when it matures after 6 months?
    2. will it be alaright to use a plastic container that is not exactly air tight?
    3. Which is beter, a plastic container or a glass one?
